The simply named "Le 2016" was Pinon's only still white bottling in this very difficult vintage in which the estate lost 75% of its crop; it replaced the usual trio of Trois Argiles, Silex Noir and Les Deronnières. With the fruit from all of these sites combined, the average age was 40 years for Le 2016, farmed organically (certified since 2007) with the soils worked by plow. The fruit was harvested manually and went through a rigorous three-step sorting process from vine to winery. As always, fermentation was spontaneous and slow, with native yeasts in old wooden vats in the naturally cool cellar carved out of a limestone hillside, lasting two to three months and stopping with some residual sugar in the wine. The wine was then racked and aged on its fine lees for 4 to 5 months in a variety of used oak barrels and foudres. Like its component wines--Deronnières, Silex Noir and Trois Argiles--are usually done, the Le 2016 was bottled as a demi-sec, though as usual not labeled as such, with a final RS of 22.4g along with 5.5g of acidity. Total production of Le 2016 was 1600 cases, which amounted to a paltry yield of only 11 hl/ha for the estate.
