Vine Age: Planted from the 1970s to early 2000s
Terroir: West-facing, 340m altitude, Kimmeridgian limestone and marl bedrock, fairly deep clay-limestone soil
Viticulture: Organic, biodynamic (certification expected 2019)
Vinification: Partly whole-cluster, gravity transfer to tank, co-vinification of varieties, indigenous yeast alcoholic fermentation and 7 to 14 days' maceration. About one year aging on lees in concrete tank, just 1g/hl SO2 added (at bottling).
