Costadilá Takes A Natural Approach To Making Prosecco. The Grapes Are Farmed Organically And Harvested By Hand In Small Baskets. The Fermentation Is Spontaneous With Only Natural Indigenous Yeasts And The Wine Is Left On The Lees For At Least 5 Months Before Bottling.  

 

The 330Slm Refers To The Meters Above Sea Level Of The Particular Vines That Costadilla Has Used. With The "330," Most Of The Grapes Are Pressed And Turned To A Still Dry Wine, While A Second Portion Is Left Out To Dry And Shrivel, Achieving Dessert Wine Sweetness. Juice From The Sweet Batch Is Then Added To The Dry Wine. The Bottle Is Then Capped And Left To Re-ferment. The Entire Process Takes Place Without The Addition Of Commercial Yeasts, Sugar Or Enzymes.

 

Dry And Refreshing, With A Delicately Light Fizz And Peach-like Characteristics.
