"The wine of Chinon Rose is elaborated from a bleeding carried out 8 to 15 hours after maceration of the cuvee coming from the sands-grave soil. The fermentation starts slowly and is maintained at 20 C. in order to extract all the aromatic potential. Depending on the vintage, this rose is tends to be dry and amplifies all its fruity on its fine lees to be tasted from its first youth guaranteeing a great freshness, accompanied by salads, meats and various dishes of spring and summer"
