Champagne Pertois-Moriset is an independent, family owned and operated grower-producer, situated in Le Mesnil-sur-Oger. Their brut 'Rose-Blanc' is actually 92% Chardonnay from the Cote des Blancs and 8% Pinot Noir from Bouzy, all from Grand Cru vineyards. Harvested by hand, the Chard is fermented in stainless while the Pinot goes in neutral oak with its skins to make a red wine. After assemblage, the wine spends 36 months on its lees prior to disgorgement. The result is a bone dry, crisp, precise Champagne with distinctive, ripe berry and biscuity notes. Pairs perfectly with a raw seafood tower or a rich chocolate raspberry cake.
