Real Minero Espadin y Largo
ABOUT
ABOUT
Product Description
Real Minero is the kind of mezcal that stops you mid-sip. Born in Santa Catarina Minas, Oaxaca, this ensamble unites cultivated Espadín and wild-grown Largo agave into something genuinely extraordinary. The Ángeles family has been distilling here since 1898 — and it shows in every drop. Maestro mezcalero Edgar Angeles Carreño roasts the piñas in underground earthen ovens, then grinds them with a horse-drawn tahona. Fermentation unfolds slowly in open-air wooden vats, driven entirely by wild native yeasts indigenous to the village. The defining touch? Double distillation in ollas de barro — hand-shaped clay pots — a near-extinct technique that imparts a mineral depth no copper still can replicate. It's bottled additive-free at natural proof, undiluted, an unfiltered window into one of Oaxaca's most celebrated mezcal legacies.
Tasting Notes
Nose:
The nose is immediately captivating. Roasted agave opens with a warm, honeyed earthiness, giving way to ripe tropical fruit — think sun-warmed mango, papaya, and a whisper of dried pineapple. Beneath the fruit, damp clay and mountain herbs drift in slowly, lending a wild, untamed character that's deeply compelling. The Largo agave adds a subtle vegetal lift — almost like fresh green cactus — that keeps the aromatics evolving and alive with every breath.
Palate:
It coats the palate like velvet. The clay pot distillation delivers a distinctive wet-slate minerality that anchors the spirit with a sense of ancient Oaxacan terroir. Roasted agave, smoked ancho chile, and dark citrus peel build in gorgeous layers over a savory, almost meaty backbone that's entirely unique to this ensamble. Mid-palate, an earthy sweetness emerges — somewhere between dark chocolate and roasted corn — beautifully bridging the Espadín's bright fruit with the Largo's brooding depth.
Finish:
Long. Smoky. Utterly unforgettable. Baking spices — cinnamon, clove, and dried pasilla chile — linger alongside a resonant minerality that keeps building long after the glass is set down. The Largo's karwinskii character introduces a resinous, almost piney herbal quality that adds yet another dimension to the finish. It's the kind of finish that invites a second pour before the first one even fades.
Food Pairing:
Mole negro is the natural companion here — Oaxaca's most complex sauce mirrors the mezcal's smoky, earthy, and spiced character with stunning, almost eerie precision. Grilled carne asada with charred scallions and warm handmade tortillas amplifies the roasted agave core, creating a deeply satisfying, smoke-on-smoke pairing. Dark chocolate with sea salt and toasted chile echoes the finish's baking spice and minerality, making for an unexpectedly elegant after-dinner match. Braised lamb barbacoa slow-cooked with cumin, Mexican oregano, and dried chiles creates an ideal bridge to the mezcal's savory, layered palate — a pairing that feels almost destined.
