ABOUT

Mal Bien Tobaxiche Mezcal is a small-batch spirit crafted with care and heritage by Victor and Emanuel Ramos, third- and fourth-generation mezcaleros from the Miahuatlán District of Oaxaca. This expression is made from 100% Tobaxiche—an agave variety belonging to the Karwinskii family, known for its elongated stalks and deep, earthy flavor.

The production process is entirely traditional. Mature Tobaxiche plants are slow-roasted underground using mesquite and encino wood, then milled by an ox-drawn stone tahona. Natural fermentation takes place in open-air sabino wood vats before being double-distilled in copper stills equipped with a refrescadera—a condenser that brings added elegance to the final distillate.

Bottled at around 54% ABV, this mezcal is powerful, expressive, and layered. It captures both the wild terrain of Miahuatlán and the precise craftsmanship of the Ramos family. This is not just mezcal—it’s a story in a bottle.

TASTING NOTES

Nose: Bright and vegetal with notes of pine resin, wild herbs, green mango, and soft smoke.

Palate: Bold and earthy with flavors of sweet roasted agave, Meyer lemon peel, warm minerals, and a subtle touch of strawberry and eucalyptus.

Finish: Long, clean, and complex with a balance of fresh-cut grass, peppery spice, and a smoky lift.

FOOD PAIRING

Grilled Meats: Perfect with lamb chops, pork al pastor, or charred vegetables.

Aged Cheese: Pairs beautifully with salty, nutty cheeses like aged Manchego or Pecorino.

Spicy Dishes: Complements mole negro or spicy tamales.

Savory Snacks: Excellent with roasted nuts, olives, or smoked fish for a mezcal tasting board.
