ABOUT

Oltretorrente farms five hectares of vertiginous, terraced vines above the town of Paderna in south-eastern Piedmont.
Their Timorasso rows, planted in 2000 on crumbly limestone–marl at 260 m, are certified organic and worked entirely by hand, with green cover crops and zero irrigation.
The 2023 fruit was harvested in late September, pressed whole-cluster, and fermented on native yeasts in temperature-controlled stainless.
Ten months on fine lees in concrete eggs add gentle breadth without masking the grape’s laser acidity; no malolactic, no fining, and just 30 mg / L SO₂ at bottling.
The result marries orchard-fresh pear and golden apple to Meyer-lemon curd, wild alpine herb, and a smoky flint note that echoes the tuffeau-like limestone beneath the vines.
Bone-dry yet mouth-coating, it finishes long, salty, and faintly almond-skin bitter—a hallmark that lets Timorasso age gracefully for a decade.
