The grapes are harvested by hand, mostly destemmed and ferment naturally in glass-lined cement tanks without any additives (yeast, enzymes, vitamins, tartric acid, etc.), nano-technological manipulation or temperature shock. The wine ages for twelve to eighteen months in a combination of barrels (never new) and cuves.
