Batch 005 is composed of 73% 21-year-old corn and 27% 8-year-old wheat. Both the corn and wheat were aged in new American oak, and the resulting whisky is a beautifully balanced, Canadian powerhouse wheater. Batch 005 presents layer after layer of caramel, butterscotch, and Irish butter. The wheat shines through with a lively note reminiscent of fresh rain on a pine needle forest bed. The mouthfeel is all-encompassing, ringing out a harmony of a shortbread cookie and apple pie. The finish simmers and crackles cinnamon and brown sugar as it glides deep into your chest, reminding you that winter isn’t so bad if you have the right whisky.
