Catskill Distilling pioneered buckwheat spirit distillation, blending 80% buckwheat with 20% small grains at 42% ABV. While legally it cannot be called whiskey due to buckwheat's grain classification, it's made exactly like whiskey. Aged approximately two years in charred and toasted oak barrels, it develops unique character. The spirit tastes spicy like rye but offers truly unique and interesting profile. Founded near the 1969 Woodstock festival site, it captures American distilling innovation beautifully.
