ABOUT

Ultradition Brut springs from Laherte's estate vines encircling the village of Chavot, where thin chalk and flint soils forge laser-bright tension.
The blend—mostly Pinot Meunier with Chardonnay and Pinot Noir—ferments with native yeasts in old barrels, preserving vivid orchard aromas while adding gentle oak breadth.
A perpetual-reserve solera, started in 1986, weaves complexity through the fresh base wine, then bottle ageing on lees knits bubbles fine as lace.
Expect ripe pear, baked apple, and citrus zest wrapped in warm brioche and almond cream, all driven by Côteaux Sud d'Épernay's signature mineral spine.
Bone-dry yet generous, it finishes long, salty, and mouth-watering, begging for another jubilant pour.

TASTING NOTES

Nose: Pear skin, white peach, and lemon curd glide over hazelnut, crushed chalk, and a hint of wildflower honey.

Palate: Juicy apple and quince ride pinpoint bubbles, framed by toasted brioche, almond, and subtle spice from old barrels.

Finish: Crisp, chalk-clean finale lingers with grapefruit pith, saline lift, and a gentle, nutty echo.

FOOD PAIRING

Shines with briny oysters, aged Comté drizzled in honey, or roast chicken seasoned with thyme and lemon—the wine’s bright acidity and creamy mousse elevate each savory bite.
