2.77ha planted in 1981, organically farmed since 2007. East, southeast exposure on steep slopes with a cooler terroir. This is typically the last parcel to be harvested, often a full week after ‘Beauroy.’ Native ferments and aged in steel for twelve months on the lees without racking.
One of Chablis’ coolest premier cru plots, ‘Vau de Vey’ sits on a very steep slope and faces east. Green apple, crushed oyster shells, tons of energy.
