Versante Nord 2022 channels Etna's black-ash terraces into a vivid, feather-light red. Eduardo Torres Acosta hand-tends bush vines—60- to 100-year-old Nerello Mascalese rooted 700–900 m up the volcano's cool north face. Organic farming only: no irrigation, horse ploughing, sulfur and copper sprays in homeopathic doses. Whole clusters ferment on native yeasts in open concrete; four weeks' gentle cap-work teases out color and fine tannin. The free-run wine rests ten months in 500-L neutral Slavonian casks, then three in concrete, bottled un-fined with minimal SO₂. Expect sleek strawberry, sour cherry, and blood-orange zest laced with sandalwood, dried herb, and volcanic smoke. Brisk acidity and gritty pumice tannins carry a bone-dry, saline finish—Etna's Alpine lift wrapped in Mediterranean warmth. Serve lightly chilled for immediate glou-glou joy, or cellar five years as savory truffle and umami notes emerge.
