"Me and my father have always farmed our... vineyard 100% manually / mechanically, without any use of herbicides, pesticides . ... I have been unable to obtain the organic farming certification thus far because one of my neighbors is a pear grower and his pear orchard, which is close to one of my vineyard parcels, is treated with conventional chemical products, and this is an issue for the Italian bodies certifying organic viticulture."

VINIFICATION

Only first press juice is used. Ferments in the Charmat lungo method which is a type of slow charmat with the fermentatino lasting 4-5 weeks.

AGING

Aged only briefly in the bottle before release.
