ABOUT

Japanese Mizunara wood is a highly sought after type of oak used for aging mainly Japanese . It is also an extremely difficult wood to master, as its permeable character is less than ideal for since liquid can easily seep through the wood. One of those who to get it, however, is Yamazaki, which is now unveiling another Mizunara-aged .

The new Yamazaki Mizunara Cask 2017 was aged for 18 years exclusively in Mizunara wood. For this , Suntory’s fourth Chief Blender, Shinji Fukuyo, tasted a few hundred Mizunara and made selections of varying ages, starting from 18 years old. A very small portion exceed even 50 years of maturation.

This latest Mizunara aged is bottled at 96 proof. The bottle label on it is 100% handcrafted mulberry Echizen paper produced via a slow process of drying on wood boards (a traditional Japanese method). The wooden box that encloses the bottle is made of cask material used in the aging of Suntory .

It is also said that age is the key to unlocking good flavors from this oak. With many other cask types, usually reaches a maturation peak at some point. But even at 50 years and beyond, Mizunara is believed by those who use it to generally still be improving in flavor.

This whisky is patience made tangible. Yamazaki Distillery Mizunara 18 Years Single Malt stands among the most revered expressions in Japanese whisky.

Aged for eighteen years in rare Japanese Mizunara oak, this release transforms time into aroma, texture, and quiet authority. The oak doesn’t simply season the spirit. It reshapes it. Incense-like spice, sandalwood, and deep fruit emerge with meditative calm, layered over Yamazaki’s naturally elegant core. Every sip feels deliberate. Every pause feels earned. This is not just whisky. It’s cultural craftsmanship in liquid form.

TASTING NOTES

Nose: Deep sandalwood rises first. Incense, dried cherry, and plum follow. Coconut, antique wood, and subtle smoke add contemplative depth.

Palate: Luxuriously textured. Dark honey, dried fig, and orange peel unfold slowly. Mizunara spice, clove, and polished oak weave seamlessly through the mid-palate.

Finish: Exceptionally long and serene. Incense and soft spice linger. Gentle sweetness, aged wood, and faint smoke fade with reverent calm.

FOOD PAIRING

This whisky deserves restraint at the table. Pair it with lightly grilled eel or miso-glazed black cod. Aged sashimi works beautifully. For dessert, try dark chocolate with sea salt or roasted chestnuts to mirror its depth without distraction.
