Yetti & The Kokonut "Hipster Juice"
The name of the wine, coupled with the color, pretty much tells you everything you need to know. This is for the cool-kids and not meant to be a wine of too much thought but rather too many friends with whom this should be shared. Dave & Koen had the vision of a blank white canvas and having a lot of fun with heaps of colors. Some were painted with a brush, others by hand and a smattering of finger paints and even spray paint: Zinfandel, Doradillo, Cabernet Franc and Sémillon (of the red mutation) are the colors. Three red grapes and one weird white were handpicked across a three-week period with “high flavor x bright acid” as the common equation. The Doradillo (weird white) was picked first and fermented 1/3 whole-bunch and 1/3 whole-berry tipped atop 1/3 pressed juice. The Zinfandel came in next and fermented 100% whole-bunch in a 25hL open top fermenter for three weeks and pumped over frequently for maximum structure, then pressed to old puncheons. The Red Sémillon was fermented on skins for two weeks and then pressed to ceramic egg to finish its ultimate weirdness. The Seaview Cabernet Franc was the last to come in and was destemmed and left on skins for two days prior to being pressed and fermented in 700L French demi-muid, bringing the elegant side of this variety. The lots were blended and settled for one month before being bottled without fining or filtration and only a small dose of SO2 at bottling.
Pretty, peppery, rosey and fruity...those are the defining characters that jump from the glass. It is a brisk, crisp and relatively mid-weight wine given its components and style. There is an herbal and saline character that runs through the mid-palate consisting of exotic spices, anise, red currants, cherries and a bit of tomato leaves. It is multi-layered with a guava juice sort of finish that has one foot in the 'sultry' camp and another in the 'fresh' one.
