Azienda Agricola COS Rami Terre Siciliane
The wine is produced from 13-year-old Insolia and Grecanico grapes sourced from estate vineyards in Fontane and Bastonaca in the Vittoria region.
Spontaneous fermentation on the skins occurs with indigenous yeast in concrete tanks. Rami normally spends 15 days on the skins. The wine ages in concrete vats for nine months followed by three months in the bottle before release.
