Picked by hand Sauvignon Blanc (10%) and Torrontes (90%). The grapes were crushed and cooled, and followed by 12 hours of cold maceration and pressing. Half-way through the fermentation process, the wine is centrifuged to halt fermentation, creating a slightly sweet, semi-sparkling wine.
