Process: After pressing at Mr. Bouché in Limoux, the juices were transported to Montlouis-sur-Loire. The alcoholic fermentation was carried out by native yeasts. Aging is carried out on fine lees for 9 months.
Tasting Notes; Bruised peach and chamomile with rich steely minerality.
