$ 40
70% Grenache Noir and 30% Mourvedre, from vines grown organically. The young vines of Mourvedre are planted in Banyuls and the Grenache on the hills of Port-Vendres, facing the sea, on soils of black shale. Manual harvest on the 9th of August 2022, with yields around 15 hl/ha. Vinification: semi-carbonic maceration in stainless steel vats for 12 days. Soft pressing, aging in barrels that have seen several wines. Bottled at the Estate without fining or filtration, just a micro-dose of sulphur.

Nose: The bouquet unfolds with layers of golden apple, fresh pear, and a hint of almond blossom. Swirling further introduces nuances of brioche, lemon zest, and a touch of flinty minerality, creating a harmonious symphony of aromas.
Palate: On the palate, Akoibon impresses with its elegant balance between creamy texture and bright acidity. Initial flavors of orchard fruits transition smoothly to notes of honeysuckle and a hint of buttery oak. The mid-palate introduces a surprising hint of exotic fruits, possibly a nod to the domaine's experimental approach.
Finish: The finish is long and satisfying, marked by lingering notes of vanilla bean, a touch of toasted hazelnut, and the signature Burgundian minerality that aficionados cherish.
Sophisticated and versatile, the Domaine YoYo Akoibon pairs delightfully with a range of dishes. Think creamy lobster bisque, roasted chicken with herbs, or even a savory mushroom risotto. The wine's layered profile also makes it a fine companion to rich cheeses or almond-crusted fish dishes, ensuring it's a favorite for both casual dinners and grand celebrations.
