François Cazin Cheverny Rosé

75% Côt/25% Pinot Noir. From sustainably farmed, hand-harvested estate vines on clay-limestone soils in the Cheverny AOC. The Côt bunches are direct-pressed; the Pinot Noir portion is destemmed and saignée after a brief maceration. They are fermented separately and spontaneously with native yeasts in stainless steel. The wine is blended and aged in tank and does not go through malolactic fermentation. Sometimes there is Gamay in the mix but it was saved for the Rouge in 2019 and 2020.
