Fukucho Forgotten Fortune Junmai Sake
Hattanso; Fukucho is the only brewery to use Hattanso, a once abandoned rice. Toji Miho Imada painstakingly revived the rice by first growing it herself in order to learn how to brew it. She passed along her knowledge to farmers that now grow it for the brewery. After years of experimenting, Miho discovered that milling the rice much less than most junmai-shu results in the best balance and complexity, and also allows the full flavor of the rice to be expressed in all its haughty boldness.
