Brian Smith, proprietor of Oyster River, defines his concept of natural wine and cider making as pre-industrial, including Belgian draught horses, which has become more common in Europe but not as much in the U.S. For the Morphos Pet Nat he uses French-American hybrid grapes developed in the Finger Lakes, Cayuga White and Seyval Blanc and allows native yeasts to do most of the work and wines are bottled unfiltered without sulfites. The wine is bright, minerally, a touch yeasty and very refreshing at 10% alcohol.
