Castle & Key's 'Roots of Ruin' gin shares its mash bill with the Restoration Rye (63% rye, 17% yellow corn, 20% malted barley). The first distillation takes place on a 50' Vendome copper column still, followed by a 600-gallon copper pot still, then a final distillation takes place in a custom Vendome dual-basket gin still. The 7-botanical blend is sourced locally from Kentucky and includes chamomile, ginger, angelica root, lemon verbena, rosemary licorice root, coriander, & juniper. Bright and floral on the nose with subtle aromas of baking spice and soft pine, the palate balances citrus and lemon verbena with high tones of spicy ginger & sweet chamomile and a distinct earthy finish reminiscent of wet, spring forest floor. Bottled at 53% ABV to best showcase flavor.
